• 625g of flour,
  • 3 eggs
  • 125g of sugar,
  • 1 pinch of salt
  • 25g brewer's yeast
  • 60g of butter

  1. Mix the brewer's yeast and a level tablespoon of flour. Dilute everything in a little lukewarm water to obtain a leaven.
    Make a well in the rest of the flour, break the eggs into it, add the sugar, the salt and knead everything until you obtain a homogeneous dough.
  2. Add the leaven and knead again.
  3. Soak this dough with the melted butter and knead another quarter of an hour, so that all these elements are intimately mixed.
  4. Flour a container in which you will put the dough so that it rises for about 12 hours.
  5. Butter and flour a baking sheet.
  6. Form a crown with the dough, make a few incisions and brush with egg. Bake in a hot oven for about ten minutes and reduce the heat for the next 10 minutes. Check for doneness with the blade of a knife.
