For 1 kg of pitted fruit
- 750 g sugar
- 1 gousse de vanille
- Start by making a syrup with a glass of water per kilo of sugar. Let the syrup boil for a while, add the plums, the vanilla pod cut into small pieces and boil for 15 to 20 minutes at a rolling boil, stirring all the time.
- Skim and put in jars.
