- 625g of flour,
- 3 eggs
- 125g of sugar,
- 1 pinch of salt
- 25g brewer's yeast
- 60g of butter
- Mix the brewer's yeast and a level tablespoon of flour. Dilute everything in a little lukewarm water to obtain a leaven.
Make a well in the rest of the flour, break the eggs into it, add the sugar, the salt and knead everything until you obtain a homogeneous dough. - Add the leaven and knead again.
- Soak this dough with the melted butter and knead another quarter of an hour, so that all these elements are intimately mixed.
- Flour a container in which you will put the dough so that it rises for about 12 hours.
- Butter and flour a baking sheet.
- Form a crown with the dough, make a few incisions and brush with egg. Bake in a hot oven for about ten minutes and reduce the heat for the next 10 minutes. Check for doneness with the blade of a knife.
