Self-taught, I created the Flancou inspired by an old model and adapted it for everyday use.
It is a 'Bulldog' style knife with a stainless steel blade (14C28N steel) in a 'Sheep's Foot' shape.
Its cutting edge is resistant and can be used for the table, for culinary preparations but also for carving wood and for any other cutting use.
The shape of the handle provides a comfortable and stable grip. Brass (lead-free) and hard, dense wood (Boxwood, Holm Oak, Ash, Beech, etc.) are used for the handle.
The total length of the Flancou is approximately 16,5cm with a 3mm thick blade. The handle alone measures between 9 and 9.5cm.
The Flancou takes its name from the spring that flows in Montsalès and recently "Flancou" has become a protected name for this knife.
